A stand-out Pouilly-Fumé from limestone rich soils. Chauveau’s Calcaire is wonderfully fresh thanks to fermentation in stainless-steel vats, but still offers notes of ripe apricot and on the palate. This rich depth is balanced beautifully by the limestone minerality – the Calcaire would therefore pair well with seafood, a fish terrine or fine cheese.
